How to Cook Artichokes in a Pressure Cooker

Today I’m featuring a pressure cooker recipe from Kalyn’s Kitchen. Kalyn’s Kitchen is filled with delicious, healthy recipes perfect for those on the South Beach Diet and for those of us who just want to eat better.

Kalyn has used a pressure cooker for years and one of the recipes she shares on Kalyn’s Kitchen is How to Cook Artichokes in a Pressure Cooker. Kalyn adds lemon zest and shallots to the cooking water to flavor the artichokes.

I’ve never cooked artichokes at home, so I’m looking forward to trying Kalyn’s recipe. To cook artichokes in the Cuisinart Electric Pressure Cooker select High Pressure and set the timer for 8 minutes. When the timer beeps, use the Quick Release Method. When all of the steam is released carefully remove the lid. Serve immediately.

    • Hi Lydia – I’ve never seen one explode, but I never wanted to get too close to my mom’s. I think a perfect pantry probably needs a new electric pressure cooker. :)

  5. I’ve never cooked an artichoke either. It seems so intimidating. I bought one a while back for $1.00 and just never used it. Left it sitting in the fridge until it went bad. lol. It may have helped if I had a plan for it!! :)
