How to Cook Artichokes in a Pressure Cooker

Today I’m featuring a pressure cooker recipe from Kalyn’s Kitchen. Kalyn’s Kitchen is filled with delicious, healthy recipes perfect for those on the South Beach Diet and for those of us who just want to eat better.

Kalyn has used a pressure cooker for years and one of the recipes she shares on Kalyn’s Kitchen is How to Cook Artichokes in a Pressure Cooker. Kalyn adds lemon zest and shallots to the cooking water to flavor the artichokes.

I’ve never cooked artichokes at home, so I’m looking forward to trying Kalyn’s recipe. To cook artichokes in the Cuisinart Electric Pressure Cooker select High Pressure and set the timer for 8 minutes. When the timer beeps, use the Quick Release Method. When all of the steam is released carefully remove the lid. Serve immediately.

    Barbara! I love your new website. I have never even thought about cooking an artichoke in a pressure cooker. This brings back the memories of the my grandmother’s pressure cooker whistling and rattling away in her cheery kitchen.

    Sounds yummy. I have steamed artichokes before, but never seasoned the water. I used lemon to keep them from turning brown. I can’t wait to try this. I am gathering up the nerve to pressure cook. You are inspiring me.

      Hi Lydia – I’ve never seen one explode, but I never wanted to get too close to my mom’s. I think a perfect pantry probably needs a new electric pressure cooker. :)
