Easy Air Fryer New Potatoes (aka Baby Potatoes)

These easy air fryer potatoes are such an easy side dish! They come together quickly and works well with lots of main dishes. 

Using new potatoes makes this potato recipe extra easy with no peeling and minimal cutting. We also loved the crispy outsides and tender insides that you get with the air fryer.

What are new potatoes?

New potatoes (aka baby potatoes) are the same variety as regular potatoes, just harvested early. They have a thin skin and don’t need to be peeled before cooking. They can be red or yellow.  

Sometimes our store will carry really tiny new potatoes that are about 1-inch in diameter. I love the convenience of these since all I have to do is wash them—no dicing needed.

However, the potatoes our store normally carries are 2-inch potatoes, which we cut in half. While a little more work, the halved potatoes brown up really nicely in the air fryer. 

Fingerling potatoes are very similar to new potatoes and will work in their place.  

Regardless of what potatoes you use, make sure to rinse them well and pat dry and slice them into 1-inch pieces before starting this recipe.

How to Make Air Fryer Baby Potatoes

It’s super easy to make these perfect to go with grilled meat or most main dishes. To get started, preheat your air fryer to 400 degrees. 

Wash your potatoes to make sure any dirt is cleaned off, then cut larger potatoes in halves or quarters so your potatoes are all similar sized. Place them in a bowl and mix them with the oil, garlic, rosemary, salt, and pepper until evenly coated.

Once preheated, place the potatoes in the air fryer basket in an even layer and air fry for 12 minutes cooking time, checking regularly for the last few minutes until they are done to perfection. You will want to serve them right away while they are still hot and crispy.

Store any leftovers in an airtight container and place them in the fridge for up to 4 days.

A Note On Garlic

I love the way the garlic cooks up in the air fryer—golden brown with a crunch to it thanks to the magic of the air fryer. We used lot and lots of garlic so that even though some falls off the potatoes, there will still be plenty to go around.

(Full disclosure: The first time we tested this recipe, my kids pulled out the roasting tray and fought over the garlic left behind in the bottom of the pan. It’s that good.)

How long should you air fry new potatoes?

The exact amount of time you should air fry new potatoes depends on our make and model of air fryer, as well as the size of your potatoes. (Some models cook hotter and faster than others.) 

Generally, new potatoes cut into 1-inch pieces and cooked in a single layer are done air frying in 10 to 12 minutes. 

If you want to make a lot of potatoes, you’re better off air frying in batches rather than crowding the basket.

Flavor Variations

This recipe is really easy to customize! You can swap out rosemary for other fresh herbs and flavors. For instance, try thyme with parmesan, basil with garlic and lemon, or cilantro with lime and chiles. 

Note: When using more delicate herbs like basil, cilantro, or parsley, toss potatoes with the herbs after air frying to avoid burning.  

In a pinch, you can also substitute your favorite seasonings or seasoning blends (think Italian seasoning or Ranch dip seasonings).  

When time is tight, you can sub garlic powder and dried rosemary, though the flavor will definitely differ.

How to Make New Potatoes in an Air Fryer

Ingredients

  • 1 pound small new potatoes well scrubbed and halved or quartered into 1” pieces
  • 1 tablespoon olive oil or avocado oil make sure it has a high smoke point
  • 2 garlic cloves minced
  • 2 sprigs rosemary chopped very fine (or 1/4 teaspoon dried)
  • ½ teaspoon salt
  • ¼ teaspoon freshly ground black pepper

Instructions

  • Select Air Fry and set the cooking temperature to 400°F to preheat the air fryer. Make sure the air flow rack is in place inside your air fryer’s basket. (If using a toaster-oven style air fryer, line a baking sheet with aluminum foil and place a wire rack on top.)
  • In a large bowl, mix together the olive oil, minced garlic, rosemary, salt, and pepper. Add the potatoes and toss until evenly coated.
  • Place the potatoes in a single layer in your preheated air fryer basket.
  • Cook for 12 minutes, tossing the potatoes halfway through to ensure they crisp evenly. For the last 4 minutes of cooking, check the potatoes at regular intervals until they reach your desired doneness. (Smaller potatoes will cook faster than larger ones.)
  • Remove from the air fryer, and serve immediately, seasoned with additional salt and pepper to taste.
