For each recipe, you’ll make an easy, fresh, from-scratch meal for dinner, and then you can freeze the leftovers for a future meal. That’s two meals for the effort of cooking just once.

Like all of the recipes here on Pressure Cooking Today, the meals for this meal plan will work in any brand of electric pressure cooker, including the Instant Pot, Ninja Foodi, or Power Pressure Cooker XL.
Instant Pot Meal Plan: 7 Days of Double Duty Dinners
This recipe for Easy Instant Pot Chicken Taco Filling made in your pressure cooker is so versatile! It is great for tacos, but it also works fabulously for taco salads, enchiladas, burritos, and more!
It’s as easy as chopping an onion, tossing in a can of tomatoes and spices, and adding in some chicken breasts. Best of all, you can even use frozen chicken!
It makes a big batch, so take the leftovers and package them in a ziptop freezer bag to go into the freezer. Make sure to label your bag and include the date so you’ll know what you’re pulling out later.
Making bean soup in the pressure cooker takes only about one-third the time that it normally takes on the stove. And using dry beans instead of canned beans gives you a much richer flavor profile.
This Instant Pot 15 Bean Soup recipe includes both a quick soak and a no soak option for your beans, meaning you can get dinner on the table faster.

Tender, thin-sliced beef is cooked in a rich sauce that is both salty and sweet.
Cooking the beef and broccoli separately and then serving together at the end helps to prevent mushy broccoli, and it also makes it easy to freeze any beef leftovers for another meal.
Who doesn’t love a good Instant Pot Key Lime Pie with its tart, creamy filling nestled in a graham cracker crust?
While I doubt there will actually be any leftovers, you can freeze this pie if you need to. Or make it ahead and freeze to pull out another time or maybe when company comes.
But let’s be honest, with the bright fresh flavors of the key lime (or just regular lime if you can’t find key limes in your area right now), I doubt that any of this pie will ever see the inside of your freezer because it will be gone before you can blink! It really is THAT good!
