Red, White and Blue Pressure Cooker Potato Salad
Classic potato salad with a fun 4th of July twist.
Last weekend we had a family reunion in the mountains. We camped in our RV / motorhome. I always keep a pressure cooker in the motorhome for quick meals.
On Saturday we have a group potluck, everyone brings whatever meat they want to grill, and a dish to share. My dad came down from Alaska for the campout and so I decided to make my quick potato salad because I knew it was an old fashioned recipe that he would love.

What a fun potato salad to serve on the 4th of July! Our grocery store doesn’t carry the purple or red potatoes, darn it. This would be great to take to a neighborhood party we’re going to.
